The Chenin fully founds its expression in the "Layon", a sweet white wine already disclosing interesting primary aromas (apple and citrus). It will evolve to take time to take on fragrances of honey and dried fruit though preserving its very characteristic bitter hint.

  • Noble Rot "Les Ondines"
  • A selective picking of botrytised grapes pursued until late november gives a few barrels of a noble-roted wine.
    A very slow maturing in the cellar offers, after almost a year, a 'Layon' with a high concentration and a wide spectrum of fragrances.

Anjou Blanc (dry)

This dry wine, blended with Chenin and Chardonnay marries the structure of the former to the fruitness of the latter. It expresses its complexity with a flowery flavour but also a good lingering on the palate.

 

Crémant de Loire (sparkling)

Composed mainly of Chenin and a touch of Chardonnay, harvested into grape boxes in order to keep the grapes in the best condition until they get to the wine press, this wine is made under the strict application of the traditional Champagne method. A minimum of a year on laths after a long second fermentation guarantees this wine a fine and elegant head.
